BROCCOLI CHEESE AND RICE 
1 cup uncooked quick-cooking rice (I use Minute rice)
1 (16 oz.) pkg. frozen broccoli
1 (10 oz.) can cream of mushroom soup
1/4 (2 lb.) block Velveeta cheese. cut into cubes

Cut Velveeta cheese into small pieces. Mix all together in a microwavable 2-quart casserole dish. Place in microwave for 15 to 20 minutes, stirring every 5 minutes.

Note: May also bake covered in 350°F for 30 minutes.
