SUNDAY CHICKEN SUPREME 
1 (3 lb.) fryer
3 tbsp. butter
1 1/2 c. chopped celery
1/2 med. onion, chopped
2 c. shredded Cheddar cheese
1 can cream of mushroom soup, undiluted
3 eggs, beaten
1/4 tsp. lemon pepper
1/4 tsp. black pepper
1 (8 oz.) pkg. herb stuffing mix

Cook, bone, chop chicken. Reserve 2 cups broth; set aside. Melt butter, add celery, onion, saute. Add reserved broth, cheese and soup, eggs, seasonings. Mix well. Stir in chicken. Spoon into buttered 9x13x2 inch pan. Sprinkle stuffing mix on top. Bake at 350 degrees for 45 minutes.
