SWEET POTATO PUFFS 
2 c. riced cooked sweet potatoes
1 beaten egg yolk
3 to 4 tbsp. hot milk or cream
1 egg white
1 lg. ripe banana
1 1/2 tbsp. melted butter
1 1/2 tsp. salt
1/8 tsp. nutmeg or ginger

Preheat oven to 500 degrees. Peel and mash banana, add to sweet potato. Combine and add, stirring well all other ingredients, except egg white. Beat egg white until stiff. Fold lightly into potato mixture. Drop from tablespoons in mounds well spaced, onto a greased cookie sheet. Bake about 12 minutes. Serves 4.
