RICE MOLD SALAD 
1 pkg. Rice-A-Roni (chicken flavor)
1 sm. can water chestnuts
1 bunch green onions
1 (3 oz.) can black olives
1 sm. jar marinated artichokes
1 c. mayonnaise

Cook rice according to package instructions. Cool. Cut up other ingredients fairly small. (You can use food processor). Combine with rice and mayonnaise. Pour into a Pam sprayed mold. Chill. Invert mold onto bed of lettuce. Serve.
