APPLE BUTTER (SPICED) 
4 gallons prepared apples
1 gallon sweet apple cider
4 pints (8 cups) sugar
1 tsp. allspice
1 tsp. cinnamon

Pare, core and slice apples. Boil sweet apple cider until it is reduces one-half. Add apples to cider while boiling. Cook slowly, until apples are soft. Press through sieve.

Return to heat and continue cooking, stirring frequently to prevent burning. When it begins to thicken add the sugar and spices. Cook until it remains in a smooth mass when a little is cooled.

Pour into sterilized jars and seal while hot.

For variety, chopped nut meats may be added 5 minutes before cooking is complete.
