STACEY'S SHRIMP SCAMPI 
1 lb. shrimp, peeled and deveined
1 lb. box linguini pasta
1 lemon
1/2 cup (1 stick) salted butter
1/4 cup extra virgin olive oil (EVOO)
1/4 cup grated Romano cheese
3 cloves chopped garlic
2 tbsp. Italian seasoning
2 tsp. crushed red pepper flakes
2 tsp. Old Bay seasoning
salt and pepper, to taste
1/4 cup pasta water (before draining pasta)

Prepare pasta as directed on package and place aside reserving 1/4 cup of the pasta water. Drizzle with a dash of extra virgin olive oil and toss to prevent sticking.

In a large sauté pan melt stick of butter and drizzle extra virgin olive oil to prevent butter from scorching. Add shrimp and Old Bay seasoning. Sauté until shrimp are fully cooked and pink.

Slice lemon in half and squeeze both halves over shrimp. Add linguini, reserved pasta water, olive oil, garlic, Italian seasoning and crushed red pepper. Toss until all covered in lemon sauce.

Add Romano cheese and season with salt and pepper to taste. Enjoy!
