CHEROKEE PIE CASSEROLE 
1 tbsp. olive oil
1 lb. ground beef
3/4 c. chopped onion
1/8 tsp. thyme
1 bay leaf
1 can cream of mushroom soup
1 (1 lb.) can stewed tomatoes
1 c. instant rice, uncooked
Green olives and sliced cheese

Saute onion in oil. Brown meat in sauteed onion. Add spices, soup, tomatoes and rice. Cook 3 minutes. Pour into 9 x 13 inch casserole.

Cut cheese slices diagonally and place on top. Slice olives and place on top of cheese. Bake at 350 degrees until cheese melts and bubbles, about 30-40 minutes. LET STAND 10 MINUTES. Serve with salad and bread. Makes 6 servings.
