TACO PIE CASSEROLE 
1 lb. ground beef
1/2 c. onion, chopped
2 envelopes taco seasoning mix
3/4 c. Bisquick
1 1/4 c. milk
3 eggs
1 c. Cheddar cheese, shredded
1/4 head lettuce, shredded
1 tomato, diced
1/3 c. olives, sliced

Heat oven to 400 degrees. Grease an 8 x 8 inch square baking dish. Brown onions and beef in skillet. Drain, and stir in seasoning mix. Beat Bisquick, milk and eggs together with wire whisk until almost smooth. Pour into the baking dish. Spoon ground beef mixture onto top of batter mixture. Bake for 25 minutes or until batter becomes a dough slightly browned. Sprinkle cheese on top and heat until melted. Remove from oven and cool for 5 minutes. Garnish with lettuce, tomatoes, and olives. Serves 6 to 8.
