DATE NUT LOAF CAKE 
1 lb. butter
2 1/2 c. sugar
2 tsp. lemon extract
1 lb. dates (chopped)
4 c. cake flour
1 tsp. baking powder
4 eggs (lg.)
1 lb. or qt. pecans (chopped)
1/2 tsp. salt

Melt butter. Add sugar and beat well. Add extract and well beaten egg yolks. Add salt and baking powder to 3 cups of flour. Add to first mixture. Add remaining flour (1 cup) to chopped dates and pecans. Add to first mixture. Fold in well beaten egg whites. Bake at 250 degrees for 2 1/2 hours.
