CHICKEN CURRY - LAYERED SALAD | |
3 c. lettuce, shredded 1 1/2 c. peas, cooked 1 1/2 c. cooked chicken or turkey, chopped 1/2 c. water chestnuts 1 c. tomatoes, chopped 1 c. seeded cucumber slices, halved, seeded 1 1/2 c. mayonnaise 1 tbsp. sugar 1 tsp. curry powder 1 1/2 c. croutons Layer lettuce, peas, water chestnuts, chicken, tomatoes and cucumber in 5-quart salad bowl. Combine mayonnaise, sugar and curry; mix well. Spread over salad. Cover with plastic film; refrigerate overnight. Before serving, sprinkle with croutons. |
