CURRIED CHICKEN SALAD 
2-3 c. cooked chicken, cubed
1 (4 oz.) can sliced water chestnuts
1/2 lb. seedless white grapes, halved
1 c. thin sliced celery
1 c. mayonnaise
1 tsp. curry powder
2 tsp. soy sauce
2 tsp. lemon juice
Salt to taste

Combine chicken, water chestnuts, grapes, celery. Combine mayonnaise (can be fat free), curry powder, soy sauce, lemon juice and salt. Combine all ingredients. Chill several hours before serving. Line serving bowl with leaf lettuce.
