VEGETABLE CASSEROLE 
1 (16 oz.) pkg. frozen combination vegetables (pea pods, carrots, cauliflower, broccoli)
1 (8 oz.) pkg. shredded Mozzarella cheese (part skim)
1 can cream of mushroom or chicken soup
1 sleeve Hi-Ho crackers, crushed
1 stick butter, melted
1 c. canned French fried onion rings (optional)

Heat vegetables according to package directions. Drain. Replace vegetables back in pan and add soup, cheese and blend until well mixed. Pour into buttered casserole dish. Mix crackers, butter and onion rings. Put on top of vegetables. Cover with plastic wrap and refrigerate. Either microwave 10-12 minutes or cover with aluminum foil and bake in oven until heated through and bubbly at 350 degrees for 30 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
