CREOLE MEAT LOAF 
1 lb. lean ground chuck
1/2 c. chopped onion
1/2 c. milk
1 egg, beaten
1/2 tsp. dry mustard
1/2 tsp. salt
Vegetable cooking spray
Creole Sauce

Combine first 6 ingredients. Mix until well combined. Shape into loaf. Place in 8 1/2 x 4 1/2 c 3 inch loaf pan coated with vegetable spray. Bake at 350 degrees for 1 hour. Cool in pan 10 minutes. Invert meat loaf onto serving platter and pour Creole Sauce over top. Cut into 6 slices to serve.

CREOLE SAUCE:

Vegetable cooking spray
1/2 c. chopped green pepper
3 tbsp. chopped onion
3/4 c. sliced mushrooms
1 1/2 c. tomato juice
2 tbsp. water
1 tsp. cornstarch
1/4 tsp. dried whole thyme

Coat medium skillet with cooking spray; place over low heat until hot. Add peppers and onion; saute 2-3 minutes or until tender. Remove from heat, and add mushroom and tomato sauce.
