SWISS STEAK 
1 med. onion, chopped, 1/2 c.
1 c. shredded carrots
3 tbsp. bacon drippings or vegetable oil
1 (2 lb.) sirloin steak
2 tbsp. flour
1 tsp. salt
Dash of pepper
2 c. tomato juice or spicy V-8
1 tbsp. Worcestershire sauce
1/4 tsp. garlic powder

In a large skillet saute onion and carrots in bacon drippings until tender. Remove to small bowl. Trim meat. Cut into 4 slices,. Combine flour, salt and pepper and pound into meat on both sides. Brown meat on all sides, adding 1 more tablespoon fat if needed. Add tomato juice, garlic powder, Worcestershire sauce and reserved vegetables to pan. Cover; simmer 1 hour or until meat is fork tender. Serve with mashed potatoes.
