TANGERINE SWEET POTATOES 
6 cooked sweet potatoes
48 tangerine sections
1 (8 oz.) jar honey

Peel and slice the cooked sweet potatoes, lengthwise into 4 slices. Put in a shallow oven-proof serving dish. Arrange 2 tangerine sections on each potato slice. Cover with honey. Bake at 350 degrees for 30 minutes or until heated through. Sprinkle a little parsley flakes over top and serve. 6 servings.
