RED & GREEN BROCCOLI CASSEROLE 
2 pkgs. frozen chopped broccoli
2 beaten eggs
1/2 c. mayonnaise
1 can mushroom soup
1 sm. can mushroom pieces, drained
1 c. grated cheese
1 (4 oz.) jar pimento pieces, drained
1 c. chopped onion
Salt & pepper to taste
20 saltine crackers, crumbled
butter

Cook broccoli and drain. Beat eggs; add mayonnaise and mushroom soup and mix. Add mushroom pieces and 1/2 of the pimento, grated cheese and onion. Add 1/2 of saltines and blend together.

Place in casserole and top with remaining saltines. Sprinkle remaining pimento on top and dot with butter. Bake at 350 degrees for 30 minutes.
