PASTA WITH MUSHROOMS AND CREAM
SAUCE
 
12 oz. fresh mushrooms
1 clove garlic, crushed
1 shot vodka
Olive oil
Salt & pepper to taste
Sm. container light cream
Grated Parmesan cheese
Lots of fresh parsley, chopped fine
Pasta (any kind, desired)

Clean and slice mushrooms. Saute in olive oil and garlic, salt and pepper. Cook until tender. Add vodka and cook until liquid evaporates.

Meanwhile cook any kind of pasta you like. When pasta is cooked, drain, return to pan and mix in mushrooms and light cream. Cook until cream thickens; add grated cheese and parsley. Serve with extra cheese.

LOVE this! simple and tasty. I added a little onion, a squeeze of tomato paste from a tube and some chicken broth to make the sauce a little saucier.

This came out great, with these substitutions. We couldn't find light cream, so we used a 60/40 mix of heavy cream and white wine. We used a bit more white wine (a pino grigio) in place of the vodka. We had emmentaler on hand, so used that rather than parmesan. We're garlic fiends, so we also upped the garlic a bit. We served this over gnocchi. Delicious!

Delicious dish. I used left over champagne left over from Valentines Day. I add butter and a little more champagne than it says. I also served it with a breaded chicken cutlet. Again this was a delicious dish.

Good recipe... I added butter to make it creamier, also added sun dried tomatoes, portabello mushrooms, red onions, and fresh basil and used white wine instead of vodka. Excellent.

I wanted a light coloured pasta sauce & was concerned that the mushrooms would darken the look of it. But this looks easy advice & so I'm off to the kitchen to do a 'Jamie Oliver' & surprise my Missus. Hopefully it will be a pleasant surprise. Here goes. Thanks for the tips.
