CALZONES 
1 pkg. dry yeast
3 tbsp. sugar
1 1/2 c. lukewarm water
4-4 1/2 c. flour

To make dough dissolve yeast and sugar in the water. Then add flour and knead for 10-15 minutes. Let rise about 1 hour until doubled in bulk. Punch down and divide dough into 6 sections.

FILLING:

1 lb. Ricotta cheese
2 cloves crushed garlic
2 c. grated Mozzarella cheese
1/2 c. Parmesan cheese
2 tbsp. butter
1/2 c. minced onion
Lots of optional ingredients like: spinach, hamburger, sausage, peppers, shrimp, mushrooms

To make filling saute the onion and garlic in butter and then add and mix the remaining ingredients and spices to taste.

Roll each dough section into a circle - fill with about 1/2 cup filling and pull over one of the sides allowing a 1/2 inch rim. Moisten rim with water and crimp edge with fork. Pierce top with fork.

Bake on a greased tray in a 450 degree oven for 15-20 minutes. Dough will be crisp and lightly brown. Serve topped with spaghetti sauce.
