CORN FRITTERS 
1 1/2 c. flour
3 tsp. baking powder
1 tsp. salt
1/2 tsp. cinnamon
1/2 c. milk
1 egg, well beaten
1 tsp. vanilla
1 c. creamed corn

Heat oil (2 to 3 inches) in deep fat fryer or heavy kettle to 375 degrees. Sift together flour, baking powder, salt, and cinnamon. Add egg, milk, and vanilla; mix well. Fold in corn and mix until blended. Drop by heaping tablespoon into hot oil. Turn occasionally until golden brown. Remove from oil and drain on paper towels. Serve hot with butter and maple syrup.
