APPLE GRAHAM PIE (Microwave
only)
 
1/2 c. butter
18 packets (18 grams) Equal Tabletop sweetener, divided
1 1/3 c. graham cracker crumbs or 16 (2") squares, crushed
5 c. thinly sliced apples (4 med. apples)
1 tsp. ground cinnamon

Place butter in large glass mixing bowl. Microwave on high setting for 1 minute, until melted. Add 6 packets Equal and crumbs. Mix well. Press half of mixture firmly and evenly into an 8 or 9 inch pie plate. Place apple slices in a large mixing bowl. (The apple slices should be 1/8 to 1/4 inch thick.) Add remaining 12 packets Equal and cinnamon; mix well.

Spoon apples into crumb crust and press down. Cover apples with remaining crumbs to make top crust. press crumbs down firmly, especially at edges, to prevent the pie from bubbling over. Insert temperature probe in the center of pie and cover it with waxed paper. Set probe temperature to 200 degrees and microwave on high setting. (If your microwave oven doesn't have a probe, microwave for 3 minute intervals and check for doneness.) When pie is done, remove from microwave and let stand 10 minutes covered with wax paper. Remove wax paper so crumb topping will dry and crisp. Serve warm or cold. Try this with Hot Spiced Tea. Servings: 8.

Since microwave ovens vary in power, you may need to adjust your cooking time.
