PORK ROAST AND SAUERKRAUT | |
New Year's Day Pork Roast is a tradition at our house. It is supposed to bring good luck, but good anytime. Fun to serve on January 1st! center cut pork roast (rolled) 1 whole onion 2 (2 lb. ea.) bags good quality sauerkraut, drained 2 large carrots, grated 2 or 3 tart apples, chopped 2 tbsp. brown sugar salt and pepper, to taste Place pork roast in Dutch oven. Add whole onion. Season with salt and pepper, to taste. Add 1-inch water to bottom. Cook, uncovered, for 2 hours at 325°F. Combine drained sauerkraut, grated carrots, apples chopped in small pieces and brown sugar together in bowl. Set aside. When pork has cooked 2 hours. remove from oven, skim off grease around edge, take out onion. Add all ingredients from bowl around sides of pork. Cover with foil and cook for 1 to 2 more hours. Note: Make sure not to dry out. Cooking time is related to size of roast. When cooked, serve with applesauce, mashed potatoes and hot bread. Delicious! Submitted by: Barbara MacLean |
