CHRISTMAS CARAMEL PIE 
1 baked pastry shell
1 1/2 c. sugar
3 eggs, separated
1 1/2 c. milk
5 tbsp. flour
1 tsp. vanilla
Pecans or coconut

Melt 1 cup sugar in deep skillet or saucepan until light brown. To beaten egg yolks, add 1 cup milk and the remaining 1/2 cup sugar mixed with the flour. Beat well. Add remaining 1/2 cup milk to caramelized sugar and cook slowly until all lumps are melted. Add other mixture and cook until thick. Then add vanilla and 1/2 cup pecans or coconut, if desired and turn into baked pastry shell.

Beat the 3 egg whites for meringue, add 3 tablespoons sugar, a few drops vanilla and top with a few pecans or shredded coconut for a festive touch. Brown in 325 degree oven.
