MEXICAN TURKEY BURRITOS 
1 lb. ground turkey
1 pkg. taco seasoning mix
1 onion
1 green pepper
1 c. grated cheese
1 jar salsa
Sour cream
8 soft flour tortillas

Cook onion, green pepper and garlic in olive oil until soft. Brown turkey, add water and seasoning mix. Combine above ingredients. Microwave tortillas until soft (25 seconds) and prepare as burritos, tacos, salads, or nachos. Serve with brown rice and refried beans. Serves 8.

For a vegetarian meal purchase a box of nature burgers from your local health food store and substitute.

Since microwave ovens vary in power, you may need to adjust your cooking time.
