ARTICHOKE SALAD 
3/4 c. cooked rice
1/4 c. vegetable oil
1/4 c. wine vinegar
8 oz. can water chestnuts, sliced
1 (14 oz.) can artichoke hearts, quartered and drained
1 c. black olives, sliced
1/4 c. snipped parsley
1/4 c. chopped onions
3/4 c. Weight Watchers Mayonnaise
1 tbsp. dry salad mix

Chill all mixed together several hours. Extra - could add bacon bits or 3 cups cooked chicken breasts, diced.

Serves 6-8.
