CARROT CAKE WITH CREAM CHEESE
ICING
 
1 1/2 c. oil
2 tsp. cinnamon
4 eggs
1 1/2 tsp. baking soda
2 c. sugar
2 c. flour
1 tsp. salt
3 c. grated carrots
1/2 c. chopped nuts

Beat eggs until fluffy. Add oil. Sift dry ingredients together and add to egg mixture. Add carrots and nuts and mix well. Put in lightly greased and floured tube pan and bake at 350 degrees for one hour 15 minutes.

ICING:

8 oz. cream cheese, room temperature
1 stick butter, room temperature
1 box confectioners' sugar
2 tsp. vanilla

Mix all together very well and spread on cooled cake. Sprinkle chopped nuts on top. Keep in refrigerator.
