CARROT CAKE WITH CREAM CHEESE FROSTING | |
1 cup oil 1 1/4 cup sugar 3 eggs 2 1/4 cup flour 2 tsp. cinnamon 2 tsp. baking soda 1 tsp. salt 2 tsp. vanilla 2 cups grated carrots 1 cup flaked coconut 1 cup chopped nuts 1 18-oz. can crushed pineapple Frosting: 1 12-oz. pkg. cream cheese, at room temperature 1/4 cup butter, melted 2 tbsp. milk 1 tsp. vanilla Powdered sugar Blend all cake ingredients well and pour into well-greased 9 x 13 pan. Bake at 350°F for 50 to 60 minutes. For frosting, cream all frosting ingredients. Add powdered sugar until desired desired consistency is achieved. Frost cooled cake. |
