BROCCOLI WITH BUTTERED BREAD
CRUMBS
 
2 1/4 lb. broccoli
1/4 c. dry white wine
3 tbsp. butter
1/2 c. vegetable stock
1 tsp. salt
1 c. dry bread crumbs

Wash, dry and trim broccoli. Thinly peel stalks from top to bottom and divide into florets. Place vegetable stock, wine and salt in a saucepan and bring to a boil. Add broccoli stalks and simmer for 5 minutes. Add broccoli florets and simmer 10 minutes longer.

Melt butter in a saucepan and bread crumbs and saute until golden brown. To serve sprinkle broccoli with bread crumbs.

Tip: The bread crumb topping may be replaced by 1/2 cup whipping cream combined with 1 cup freshly grated cheese. Pour mixture over broccoli and bake in a preheated oven 450 degrees for about 10 minutes. 275 calories per serving.
