MEXICAN LASAGNA | |
1 to 1 1/2 lb. ground beef or ground turkey 1 pkg. lg. flour tortillas 1 lb. grated cheese (Colby or Monterey Jack are good) 1 (12 oz. or larger) sour cream 2 cans enchilada sauce 1 pkg. taco seasoning Shredded lettuce Brown and drain ground meat. Mix with taco seasoning. Spray a 9x13 inch baking pan with Pam. Beginning with the tortillas, layer all ingredients, except enchilada sauce and lettuce, as you would for regular lasagna. After completing the last layer (you may not use all of the tortillas), pour both cans of sauce over the entire pan. Top with cheese and bake until bubbly, at 350 degrees for 30 minutes. Serve with shredded lettuce on top and more sour cream, if desired. Ummmmmm good! |
