WEST COAST CHICKEN RICE 
3 chicken breasts, halved (about 1 lb. each)
1/4 c. butter
2 tsp. salt
1/4 tsp. paprika
1 c. sliced onion
1 sm. clove garlic, minced
1 c. UNCLE BEN'S® converted rice
1 (13 3/4 oz.) can chicken broth
3/4 c. water
1 tsp. oregano

Brown chicken breasts well in 3 tablespoons butter, turning as needed to brown evenly. Remove breasts from pan and sprinkle with 1 teaspoon salt and paprika. Add remaining 1 tablespoon butter to pan. Add onion and garlic, cook until onion is tender. Add rice, chicken broth, water, oregano and 1 teaspoons salt. Bring to a boil. Pour rice mixture into shallow 2 quart casserole. Arrange chicken breasts on top. Cover with foil securely to edge of casserole. Bake at 350 degrees until chicken is tender, 45 minutes. Makes 6 servings.
