RICE CAKE | |
3 c. cooked rice 3 c. milk 2 tbsp. butter 1/3 c. sugar 1 tsp. vanilla 2 eggs, beaten 1/2 c. sugar Combine rice, milk, and butter and cook until thick and creamy, about 30 minutes. Add 1/3 cup sugar to eggs and vanilla. Stir a little pudding into eggs mixture, then blend all. Cook 2 minutes. Pour 1/2 cup sugar into loaf pan. Cook over very low heat, stirring until sugar melts and turns a golden color. Have sugar coat pan sides. Pour pudding into loaf pan. Cover and bake at 350 degrees for 30 minutes. Cool. Unmold onto serving dish. Serve plain or with whipped cream. 6-8 servings. |
