1 lb. sweet potatoes
1/2 tsp. grated orange rind
1/2 c. orange juice
2 tbsp. brown sugar
1/4 tsp. cinnamon

Boil potatoes until tender. Remove skins. Mash pulp. Add remaining ingredients and whip until fluffy. Place in a 1 quart ungreased casserole. Cover and bake at 350 degrees for about 25 minutes or until heated through.
