(ICEBOX) REFRIGERATOR PICKLES | |
7 c. cucumbers, thinly sliced 1 c. green peppers, thinly sliced 2 c. sugar 1 c. onions, thinly sliced 1 tbsp. salt 1 c. vinegar 1/2 c. celery seed Combine cucumbers, onions, peppers and salt. Let this stand for 1 hour. Drain well. Mix sugar, vinegar and celery seed. Stir until sugar is dissolved. Add to the drained cucumbers. Put the cucumbers and vinegar mixture in a large jar (this makes about 9 cups of pickles). Use a gallon jar. Store in refrigerator, turning often to mix spices. The pickles should be ready to eat in about one month. |
