CHOCOLATE MARSHMALLOW COOKIES | |
1 3/4 c. sifted flour 1/2 c. cocoa 1 tsp. baking soda 1/2 tsp. salt 1 c. sugar 1/2 c. shortening 2 eggs 1 tsp. vanilla Nutmeats Marshmallows Sif t dry ingredients together. Combine shortening, eggs and vanilla. Add dry ingredients and mix well. Dough will resemble pie dough. Place a few pecans in clusters on cookie sheet, roll dough in small walnut size balls and press a ball lightly on each nut cluster. Bake 8 minutes at 350 degrees. Cut marshmallows in halves and place a half, cut side down, on each cookie. Return to oven and bake only 2 minutes. When cookies are cool top with frosting. FROSTING: 1/2 c. butter 1/2 c. buttermilk 2 tbsp. cocoa Powdered sugar Combine butter, buttermilk and cocoa; cook until blended. Boil 2 minutes. Remove from heat and add powdered sugar until of spreading consistency. Spread over cookies. Makes 4 dozen. Note: Cookies must be cool. Spread frosting while it is still warm. |
