ZUCCHINI HEARTY SOUP 
1 1/2 qts. water
1 c. dry white beans
2 potatoes
1 lb. green beans
1/2 chopped basil OR 1/4 c. dry basil
5 cloves garlic, crushed
2 onions, sliced
1/4 c. olive oil OR salad oil
3 tomatoes, diced
2 zucchini squash, diced
1 (8 oz.) tomato sauce
2 tbsp. salt
1 tsp. black pepper
1/4 c. chopped parsley

Put water in a large kettle and boil. Add beans, let boil 2 minutes and simmer for 1 1/2 hours. Add potatoes, green beans, basil and garlic. Simmer 15 minutes. Brown onion in salad oil. Add onions, tomatoes, squash, tomato sauce, salt and pepper. Simmer 20 minutes. Sprinkle parsley over the top of the soup.
