MAINE CRAB CAKES 
4 oz. crab leg
1 oz. mayonnaise
1/2 oz. Dijon mustard
3 splashes Worcestershire
2 splashes Tabasco
1 scallion, sliced into rings
1/4 tbsp. chives
Bread crumbs, as needed
Salt and pepper to taste

Break up leg meat; look for cartilage. Combine all ingredients. Add bread crumbs until mixture will hold together when squeezed. Make patties from mixture. Saute at medium heat until cooked through. Serve simply with lemon, or a sauce of your own. Serves 2.
