EASY - DO PINEAPPLE UPSIDE -
DOWN CAKE
 
1 yellow cake mix, prepared as per pkg. directions
1 (12 oz.) jar apricot-pineapple preserves
1 lg. can sliced pineapple rings
1 sm. jar maraschino cherries
1/2 c. pecan halves
2 tbsp. butter, melted

(I use a large cast-iron skillet but any large round or rectangle pan can be used.)

Coat bottom surface of pan with butter; spread preserves in pan. Arrange pineapple rings in a pattern in pan, pushing down through preserves. Put 1 cherry in center of each pineapple ring. Arrange pecan halves in between pineapple rings, pushing through preserves. Pour prepared cake mix slowly and evenly over all. Bake as directed on cake mix package. Turn out immediately while still hot onto serving plate.
