APRICOT BREAD 
1/2 c. diced, dried apricot, packed to measure
1 tbsp. baking powder
1/4 tsp. baking soda
2 tbsp. butter, room temperature
1/2 c. orange juice
1/3 c. water
2 c. flour
3/4 tsp. salt
1 c. sugar
1 lg. egg
3/4 c. walnuts or pecans

Recipe will make 3 small loaves or 1 large loaf. Soak apricots in water for 20 minutes. Lightly grease and flour pan(s). Heat oven to 350 degrees. Mix flour, baking powder, salt, and baking soda. In a large bowl, beat sugar, butter, and egg until light and fluffy. Drain water from apricots into orange juice. Stir flour into butter mixture, 1/2 cup at a time, alternating with orange juice, 1/3 at a time. Stir in apricots and nuts. Bake large loaf for 60 minutes, small loaves for 45 minutes or until bread is golden brown.
