CARROT COOKIES 
1 c. mashed, cooked carrots
1 egg
1 c. sugar
2 c. flour
2 tsp. baking powder
1/4 tsp. salt
3/4 c. shortening
1 tsp. vanilla

Cream sugar and shortening. Stir in carrots, slightly beaten egg, and vanilla. Add flour, baking powder, and salt. Drop by teaspoon onto greased cookie sheet. Bake for 12 to 15 minutes at 375 degrees. Makes 36.
