ZUCCHINI BREAD 
3 eggs, beaten until frothy
1 c. salad oil
1 tbsp. vanilla
2 c. sugar
3 c. flour
1 tsp. baking soda
1 tsp. salt
1 tsp. baking powder
1 tsp. cinnamon
2 c. grated, raw zucchini

Add ingredients in order. Stir in zucchini by hand. Bake at 325 degrees for 1 hour. Makes 2 loaves.
