1/2 c. flour 1/2 tsp. baking powder 1/3 c. cocoa 1 c. sugar 1/3 c. plus 2 tsp. shortening or butter 2 eggs 1 tsp. vanilla 1/2 c. chopped walnuts In 2-cup measuring cup in microwave, melt shortening or butter. Add cocoa and set aside. In medium mixing bowl, beat eggs and add sugar until light. Stir in cocoa mixture, add dry ingredients, vanilla and nuts. Mix and pour into an 8x8 inch pan, greased lightly. Bake at 350 degrees for 30-35 minutes. Cool and frost with chocolate frosting. Put in small pan 1/3 cup butter, 2 tablespoons hot coffee, 2 tablespoons cocoa, and 1 teaspoon vanilla. Beat. If not thick enough, add more sugar or thin with milk, if it is too thick. |
