HALIBUT STEAKS IN ZESTY YOGURT
SAUCE
 
1 sm. purple onion, sliced & separated into rings
1 1/2 c. plain nonfat yogurt
1 1/2 tbsp. lemon juice
1 tsp. grated, peeled ginger root
1/4 tsp. pepper
1 1/2 tsp. cumin seeds, crushed
3/4 tsp. mustard seeds, crushed
3 (8 oz.) halibut steaks, halved

Place onion in a small saucepan, add water to a depth of 1/2 inch. Cover and simmer 5 minutes or until onion is tender, drain well. Combine yogurt, lemon juice and ginger root in a small bowl, add spices, stirring well. Place halibut steaks in a 12 x 8 x 2 inch baking dish. Arrange steamed onion over fish, pour yogurt mixture over fish and onion.

Cover and bake at 300 degrees for 30 minutes or until fish flakes easily when tested with a fork. Remove fish and onion with slotted spatula, discard remaining liquid. (Weigh 4 ounce servings.) Serve with 1 cup salad. Single serving = 4 ounces protein, 1 cup salad.
