BEANS AND RICE 
2 lb. smoked sausage, sliced
1 onion, chopped
1 can rotel tomatoes
3 cans tomato sauce
2 cans red beans, drained
cajun seasoning
salt and pepper to taste
cooked rice

Sauté onions and sausage in 2 Tbsp. oil; drain. Add tomatoes, tomato sauce and seasoning. Cover and simmer for 30 minutes. Serve over rice.
