OATMEAL CARAMEL BARS | |
1 c. butter, softened 2 1/2 c. flour 2 c. packed brown sugar 2 eggs 2 tsp. vanilla 1 tsp. baking soda 3 c. quick oats 1 c. chopped nuts (walnuts or pecans) 24 vanilla caramels (I use 30) 2 tbsp. milk (increase to 3 tbsp.) 1 c. semi-sweet chocolate pieces (I use Nestle's miniature chocolate chips) In large mixing bowl, beat butter with electric mixer for 30 seconds. Add about 1 cup of the flour, the sugar, eggs, vanilla and soda. Beat until combined. Beat or stir in remaining flour and oats (will be thick). Press 2/3 of the dough into an ungreased 15x10 inch baking pan. Sprinkle with chocolate bits and nuts. In a medium saucepan, combine caramels and milk. Cook over low heat until caramels are melted. Drizzle mixture over nuts and chocolate. Drop remaining dough by teaspoons over the top. Bake in 350 degree oven 25 to 30 minutes or until top is light brown. Cool in pan on wire rack. Cut into bars. |
