EGGPLANT PARMESAN 
2 small eggplant
2 eggs
Flour
Parmesan cheese
Mozzarella cheese
Salt and pepper
Enough tomato sauce to cover

Slice eggplant into 1/4 inch thick slices. Season flour with salt and pepper. Beat eggs with salt, pepper, parsley and Parmesan cheese. Flour each slice of eggplant, then dip into egg mixture. Fry in olive oil until brown. Layer into a baking dish fried eggplant, tomato sauce, Parmesan cheese. Top with tomato sauce and Parmesan and Mozzarella cheese. Bake covered at 350 degrees until bubbling. Take off top last 10 minutes to slightly brown cheese.
