CHICKEN CHOW MEIN 
1 green pepper, cut in strips
2 c. celery, chopped
1 c. onion, sliced
4 tbsp. butter
2 c. chicken stock
1 tsp. salt
1/2 tsp. pepper
3 c. chicken, cooked and torn in pieces
2 cans chow mein noodles
1 (#2) can bean sprouts
3 tbsp. corn starch
3 tbsp. soy sauce

Cook green pepper, celery, onions, mushrooms in butter. Add broth, salt, and pepper and bring to a boil. Mix cornstarch with small amount of water to form smooth paste. Add to liquid and stir until smooth, when thickened add chicken. Stir in soy sauce. Then add bean sprouts and vegetables. Heat thoroughly. Serve over chow mein noodles or rice.
