APPLE OAT STREUSEL MUFFINS 
MUFFINS:

1 1/2 c. Post Oat Flakes
1/3 c. brown sugar
1 1/2 tsp. cinnamon
2 egg whites
3 tbsp. oil
1 1/4 c. all purpose flour
1 tbsp. baking powder
1/8 tsp. salt
1/2 c. skim milk
1 1/2 c. chopped, peeled apples

Mix cereal, flour, brown sugar, baking powder, cinnamon and salt in large bowl. Combine egg whites, milk and oil in small bowl; add to flour mixture and mix to moisten flour. Fold in apples. Spoon into muffin pans coated with cooking spray.

TOPPING:

1/2 c. Post Oat Flakes
1 tsp. cinnamon
1 tbsp. brown sugar
1 tsp. oil

Lightly crush cereal; mix brown sugar and cinnamon. Drizzle oil over mixture; stir with fork until crumbly. Sprinkle over muffins. Bake at 350 degrees for 20 minutes or until brown. Let stand for 5 minutes. Serve warm. Makes 12 muffins.
