BRISKET 
1 (6 lb.) brisket
1 qt. buttermilk

Trim fat from brisket. Soak in buttermilk overnight. Bake in 200 degree oven for 6-8 hours. Cook on grill basting with Texas Barbecue Sauce. Serves 12.

TEXAS BARBECUE SAUCE:

1 c. onion
1 tbsp. fat
1/2 c. water
2 tbsp. vinegar
1 tbsp. Worcestershire sauce
1 c. chili sauce
1 tsp. mustard
1/4 tsp. paprika
1 tsp. pepper
2 tbsp. brown sugar
1/4 c. lemon juice

Saute onion in fat. Add remaining ingredients. Simmer for 20 minutes. Serves 6.
