DENTON FARM CRABCAKES 
1 lb. crabmeat
6 tbsp. softened butter
2 c. crushed saltines
1 tbsp. mayonnaise
1/8 tsp. cayenne pepper
1/4 tsp. salt
1 tsp. Old Bay seasoning
1 sm. onion, minced
2 eggs, beaten lightly

Place all ingredients in a mixing bowl. Toss carefully with two forks. Blend thoroughly, but try to keep crabmeat as chunky as possible. Shape mixture into thick patties.

Lightly grease heavy skillet or frying pan, or pour in 1/2 inch cooking oil for a "deep fried" flavor. Fry until golden brown, turning carefully one time. Do not overcook. Serve with cocktail or tartar sauce.
