APPLE CAKE (DIABETIC) 
2/3 c. salad oil
5 tbsp. liquid sweetener
1 egg
1/2 tsp. salt
1/2 tsp. baking soda
1 tsp. baking powder
1 1/2 c. flour
1/2 c. raisins
1 1/2 c. diced apples
Chopped nuts

Mix in order given in large bowl. Pour into lightly greased 9x9 inch pan. Sprinkle top with nuts. Bake at 350 degrees for 30 minutes.

Exchange 1 serving=1 bread and 2 fats. 170 calories with ice cream.
