CHICKEN WITH ZUCCHINI 
Family size pkg. chicken thighs (2 pieces per person)
1/3 to 1/2 c. plain or Italian seasoned bread crumbs
1 or more zucchini
1 lg. can (2 c.) stewed tomatoes

Place chicken in baking dish and sprinkle lightly with bread crumbs. Cut 2 zucchini into chunks or thick slices. Do not peel. Add to dish. Add undrained tomatoes. Bake for 1 hour at 350 degrees or until chicken is done.
